We’ve been spoiled this week. My birthday has made for delicious meals, and I’m sad that I didn’t get a photo of Chef Chloe’s Tempeh Picatta, because it was amazing. The tempeh made for good leftovers though. We grilled it with BBQ sauce and have had it for several days over. I think it may be a new favorite in our household. So here it is, a few of our meals over the past week or two.

We’ve been eating home a lot more lately, and it’s been pretty boring. We have had a few fun splurges over the past few weeks though that I thought I’d share.

SoCo Farmers’ Market {Farm to Food Truck Challenge}

Yesterday we drove to Costa Mesa to see the Farm to Food Truck Challenge, hosted by the SoCo Certified Farmers’ Market. On the drive over, Big T, Grandma G and I had a serious talk with Little T. We said, “listen, Little T. Just because they’re going to have lots of amazing gourmet food trucks, that doesn’t mean we’re going to be able to try everything.” Little T just smiled, knowing that Momma J and Big T are defenseless against good food. Let me just say that being proven wrong by Little T tasted mighty delicious.

From their website:

A farmers’ market inspired cooking competition. Top gourmet food truck chefs will compete against each other to create the best dish using locally grown farm fresh ingredients.

If you’re a foodie, you have to go to this event. I’d suggest getting there a little before the challenge starts so you have time to browse the food trucks and purchase some tasty treats while you wait for the chefs to cook their meals for the competition. When we first arrived, we were happy to see that Seabirds was there. They’re a vegan gourmet food truck that made an appearance on the Food Network in season 2 of The Great Food Truck Race.

I asked what they recommended, and they said we had to try their macaroni and cheese. Um, yeah. It was the best mac and cheese I’ve ever had. In my life.

We also tried out their Tempeh Tacos and Beer Battered Avocado Tacos, because we couldn’t just try one! Big T said it was like his tongue was riding a flavor train, all the way to yumsville.

We were too full to eat anything else after that…Okay, okay, so we found room for three of Seabird’s cupcakes.

Our non veg fellow foodie friends had a freshly made waffle with ice cream from the Waffles de Liege food cart.

While we waited for the competition to start, Little T listened to the music from The Tyler Steel Co. We purchased two of their CD’s (they let us choose the price of their CD’s because they’re awesome like Radiohead) and we listened to their CD for the rest of the day. Little T was especially mesmerized by the drummer.

Little T also had a handmade strawberry lemonade pop.

For the competition, they gave the food truck chefs a list of ingredients they had to use. Once they got the list, they lined up, had to shop for the food at the Farmer’s Market, and then had 60 minutes to prepare their dish.

It was fun to watch the Chefs run around the market and quickly pick out the food they needed for their dishes.

While the chefs cooked, Little T said he had something he needed to do. Next thing we knew, we found him hanging out with all the cheerleaders. He kept trying to run off with their pom poms.

He also tried out some new shades:

It was awesome when the competition began. We loved seeing all of the entries as they were presented to the judges.

Once the competition was over, we decided we needed some more food (hah). So we drove to The Camp and ate at Native Foods.

Little T shook his head at us and said we were ridiculous, while the rest of us patted our full bellies. Mmmmm, what a tasty day it was.

Here’s our menu plan for the week. I try to cook in batches so we have enough food for a day or two. The recipes are pretty simple, but if it’s something more difficult I’ll make it on the weekend while Big T is around to watch Little T. I also take a look at what fruits and vegetables we have around the house to make sure they aren’t going to waste and try to make things that Little T can eat on his own.

Breakfast:

  • Oatmeal with Baked Apples-2 diced apples shaken in a bag with cinnamon and nutmeg, then microwaved in a covered bowl with a little soymilk for 2 minutes to soften. Obviously, it tastes better if you do it on the stove or in the oven, but the microwave is quick and easy.
  • Sugar Free Peach Muffins from http://www.fatfreevegan.com
  • Green Drink- kale, romaine lettuce, apple, ginger, celery, pear, and lemon.

Snacks: 

  • Fruit Salad
  • Healthy Almond Butter Bombs-made with oatmeal, almond butter, agave, and mashed bananas.
  • Watermelon Juice-watermelon in the juicer with a squeeze of lemon)
Lunches: 
  • Summer Minestrone from The Veggie Queen’s e-book.
  • Mexican Lasagna from http://www.fatfreevegan.com
  • Salad with Tahini Dressing–A variation from the Crazy Sexy Diet Cookbook. This is more for myself, but Little T loves the Tahini Dressing.

I don’t ever plan out dinners and toss together whatever ingredients we have. I do know that I want to try to this recipe for roasted tomato soup from Healthy Happy Life, and the recipe for bread salad from The Veggie Queen’s Cookbook.

Vegan Banana French Toast = Baby Finger Food

I’ve been trying to think of meals that Little T can eat on his own with his chubby little fingers. I remembered one of my favorite recipes from my time at the Dr. McDougall 10 Day Health Clinic. It changed my life when I went there because of health problems in 2003. One of the great things about the clinic were the buffets of food they’d have out for each meal. You could pick whatever you wanted to eat and find things you liked so you could make it at home. They also had the names and recipes for all the food. It doesn’t get any easier than that, folks!

When I was thinking of finger food for Little T, I thought of their banana french toast. It’s so easy to make and I knew he’d love it. You can find this recipe in the McDougall Quick and Easy Cookbook. You may also be able to find it on their website if you search the newsletter section.

Vegan Banana French Toast by Mary McDougall

We made this for Little T last night to try it out. We had to make extra because the adults kept sneaking bites. :p He gave a happy little foot kick after each bite and ate two pieces of the french toast. I think it’s a winner.

Eating on his own...

Today we had quinoa made in water that was boiled with ginger. It had curry, lentils, and broccoli bits in it. We were working on using the spoon, but he definitely hasn’t mastered that skill yet. He ate half of that bowl. I can’t believe how much this kid eats!

How to make: 

Slice up some ginger and boil it in water. Add the quinoa and cook. Once the quinoa is done, add lime, steamed lentils (I use the Trader Joe Lentils), and steamed diced broccoli.

Vegan and Gluten Free Carrot and Potato Soup

Carrot and Potato Soup

This is one of Little T’s favorites. We make a big batch of it and eat it throughout the week.

Ingredients:

Two bags of Carrots

Small Potatoes (we use about 1 potato for every 3 carrots)

2 cloves garlic

1 chopped yellow onion

vegetable broth

cumin to taste

curry to taste

lime

salt and pepper to taste

First we put a bit of olive oil in the cooking pot and brown the onions and garlic. Once they’re finished, we add potatoes, carrots and spices and mix them together to get the spices to meld. Then we add the vegetable broth and simmer until the carrots and potatoes are soft (about 30-40 minutes).

Little T can probably eat it without being blended, but we like the consistency when it’s blended. We used a hand mixer  to blend, and then added the lime. Taste the soup to see if you need to add more spices.

Fourth of July Black Bean Burgers

We always have a great time on the 4th of July, but every year we go and buy some sort of fake hot dog, hamburger, or sausage so we can eat with the rest of the family. We are always disappointed and have never enjoyed the taste of the fake stuff. This year with Little T around, I wanted to make something healthier. I modified the Black Bean Burger recipe from Kris Carr’s “Crazy Sexy Diet”, and holy guacamole, it was amazing. Much better than any sort of fake meat. Little T _loved_ them!

The only problem was that Little T wasn’t in the mood to watch me cook. I gave him a carrot and that amused him for a while:

But soon he wanted a lot more attention than I could give him. At least I was able to make a lot of the black bean burgers. Not enough to actually make it to the 4th of July though, so we’re going to have to go through all of that cooking again. Ah well, it will be worth it when I’m watching the fireworks with Little T and enjoying our meal together.
